Color of fruits of an olive tree depends on maturity degree. Color of the fruits (green olives) collected prior to maturing process varies from green to light yellow. Color of the fruits (the combined olives) collected in the course of maturing, but before a maturity, varies from pink to chestnut. Color of the fruits (black olives) collected after approach of a full maturity – black. These mature fruits are also called in Russia olives.
Actually preserve only green olives, black go for production of olive oil. Color of tinned olives is influenced by production technologies. Those black tinned fruits which we call "olives" also collect immature. Black color of olive is gained as a result of special processing.
